When you win a race (dosen't matter which one) hold X and 
you will see cars with a black circle moving around under them.  
Just look for the car that you want and when the circle is under 
the car you want you just release X and vwala you have the car.  
(race the endurance races and you will get good cars)

When in Arcade Mode goto single race mode and at the the difficulty 
selection hold L1 and L2  the Hard level will change to Professional
